
Black Bean Rice

Ingredients:
- 1 large onion, diced
- 3 cloves of garlic, crushed
- 1 tsp cumin
- 3 tsp smoked paprika
- 1/2 tsp chilli flakes
- 1 bell pepper, diced
- 1 1/2 cup rice
- 14 oz. can chopped tomatoes
- 14 oz. water (use tomato can to measure)
- 1/2 can of corn (or 1 cob)
- 1 can black beans
Instructions:
- add oil and onions to a deep and wide frying pan and saute for 3 minutes
- add garlic, chilli, spices, and peppers and cook for around 2 minutes, stirring occasionally
- add rice, tomatoes
- mix thoroughly and bring to a boil
- turn the stove to low heat, cover the pan, and cook for 10 minutes
- mix in corn and black beans and cover for 3 minutes
- serve with cilantro, green onions, and guacamole
