
Burrito Bowl

Ingredients:
- 1 can corn
- 1 yellow bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 orange bell pepper, thinly sliced
- 1 large red onion, thinly sliced
- 1 tbsp avocado oil (or other substitute)
- 1/2 tsp salt
- 1/2 tsp black pepper
-15 oz. can of black beans, rinsed
Green rice:
- 1 cup brown rice
- 1 avocado
- 2 jalapeños, seeds removed and finely chopped
- 3 cloves minced garlic
- 1 cup cilantro
- 2 limes, juiced
- 1/4 cup water
Quick pico:
- 1 pint cherry tomatoes, quartered
- 1 small red onion, diced
- 1/2 cup cilantro, chopped
- 1 lime juiced
Directions:
- cook brown rice according to package
- add sliced peppers and onion to large bowl and season with oil, salt, and pepper
- spread out on foil lined tray and bake at 400 F for 25 minutes
- add avocado, jalapeño, lime juice, cilantro, and garlic to food processor and mix
-fold in avocado mixture to rice*
- assemble bow
Add or remove any toppings to your preference
*Can also be served on regular brown rice
*Great for meal prep!
