CAULIFLOWER SOUP



INGREDIENTS:

- 3 leeks, cleaned and chopped

- 1 yellow onion, diced

- 2 garlic cloves, chopped

- 3 1/2 cups vegetable broth

- 2 1/2 cups chopped cauliflower

- 3/4 cups white beans, drained

- 3 fresh thyme sprigs

- salt and pepper to taste


DIRECTIONS:

- remove the ends and outer layer of the leeks. slice them

lengthwise in half and dice into small -pieces and place into a

bowl of water

- dice the yellow onion and mince the garlic cloves

- in a large pot on low to medium heat, add leeks and onions in oil

for 5 minutes

- add garlic and thyme to the vegetables and stir for 30 seconds

- add chopped cauliflower, vegetable broth, white beans, salt, and

pepper

- cover pot and let simmer for 12-15 minutes until cauliflower is

soft

- remove thyme sprigs and transfer soup to a blender and blend until

creamy and smooth


BONUS: make this in an instant pot on high for 8-10 minutes and blend! serves well with toasted french bread!
