
Healthy Coleslaw

Salad:
- 1/2 head red cabbage
- 1/2 head green cabbage
- 2 heaping cups shredded carrots
- 1 cup cilantro, finely chopped
- 1 jalapeño (optional)
- 1/2 cup green onion (green part only)
- 1/4 cup sliced almonds, toasted
Dressing:
- 3 tbsp avocado oil (or oil substitute)
- 2 tbsp apple cider vinegar
- 1-2 tbsp pure maple syrup (depending on sweetness)
- 1 clove garlic, finely minced
- 1/4 tsp cayenne pepper
- salt and pepper to taste
Directions:
- add all coleslaw ingredients to a large bowl except the almonds
- in a smaller bowl, add the dressing ingredients and whisk to combine
- pour the dressing over the salad and mix to combine
- add the almonds on top before serving
