Lentil Tacos


- 1 cup dried lentils or2 cups cooked lentils

- non stick olive oil spray (or other cooking spray_

- 1/2 cup chopped onion

- 2 garlic cloves, minced

- 1/2 cup chopped peppers (use a mixture of bell and jalapeño for extra heat)

- 1/2 cup grape tomatoes, halved

- 1 tsp chili powder

- 1/2 tsp cumin

- 1/2 tsp garlic powder

- 1/2 tsp smoked paprika

- 8 six-inch tortillas or lettuce leaves

*optional: avocado, cilantro, salsa


- prepare lentils according to the package

- add onion, garlic, and peppers to a large sauté pan lightly coated with olive oil over medium heat

- sauté for about 3-5 minutes or until onions soften

- when the onions have softened, add tomatoes, 2 cups of cooked lentils and spices

- sauté over medium heat for another 3-5 minutes

- assemble tacos by heating tortillas on a dry pan for 1 minute on each side and adding toppings
