Roasted Tomato Sandwich



Ingredients:

- 2 large tomatoes, cut in 8 slices

- avocado oil (or other substitute)

- salt and pepper

- oregano

- 1/4 cup vegan mayo

- 1/2 lemon, juiced

- 1-2 cloves garlic, diced

- vegan butter

- 4 slices sourdough bread (or bread of choice)

- 1 large avocado

- fresh basil

- arugula

*Ingredients to make 2 sandwiches


Directions:

- preheat oven to 350 F and line baking sheet with parchment paper

-place sliced tomatoes on baking sheet and drizzle with olive oil and sprinkle salt, pepper, and oregano

-cook in oven for 20 minutes

-prepare lemon garlic aioli while tomatoes cook

-combine vegan mayo, lemon juice, garlic, salt, and pepper into a bold and mix

-spread butter on one side of each bread and place butter side down in pan on medium heat

-cook until browned to your liking

-to assemble, spread lemon garlic aioli on each slice of bread and top with tomatoes, avocado, arugula, and basil

- slice and serve

*add or remove ingredients to your liking (red onions are a great addition)

*plain mayo can be used instead of making the lemon garlic aioli
