VEGGIE SANDWICH



INGREDIENTS:

- 4 tbsp mayo

- 4 tbsp hummus (traditional or flavored such as garlic)

- 1 cup alfalfa sprouts

- 1 tomato, sliced

- 1 bell pepper, sliced

- 1 cucumber, sliced

- 1/2 small red onion, sliced

- 1 small avocado, sliced

- a few slices of collard greens or your choice of lettuce

your choice of bread


DIRECTIONS:

- add 1/2 tbsp of hummus to the first slice of bread

- add cucumber, bell peppers, and tomatoes on top

- add collard greens, avocado, onion, and sprouts

- add 1/2 tbsp of mayo to the second layer of bread and add on top

- add two toothpicks to each side and use a serrated knife to half

the sandwich


BONUS: if you are having trouble getting the veggies to stay in place, use some hummus as "glue"! mix and match the type of bread, type of hummus, or what vegetables you include to create variety!
